Brined Pork Loin with Apple Compote

1 cup apple juice
1/2 cup apple cider
1 cup water
2 bay leaves
1 cinnamon stick
2 cloves
2 tablespoon salt
2#s Pork Loin
3 sprigs of thyme - chopped
2 teaspoons grated peeled fresh ginger
5 medium size Gala Apples, peeled, cored and sliced into wedges
Grapeseed Oil

Directions: Preheat oven to 350 degrees
1. Combine 1st seven ingredients and put into a boil. Let it cool off. Combine Pork and brine in a container or a plastic bag and seal. Brine for 24 hours.
2. Remove Pork from brine and pat dry. Strain out spices from brine and reserve the brine. Coat with grapeseed oil, lightly salt and pepper. Let it seat for half hour. Sear Pork until golden brown. Transfers Pork to a baking pan and cook for 40 to 45 minutes. Check temp through thermometer.
3. With the same pan used to sear Pork, add-in sliced apples. Sauted for about 4 to 5 minutes adding-in thyme and grated ginger. Add-in strained brine, scraping pan to loosen browned bits. Reduce heat to low; cook for 5 minutes until apple is tender, stirring frequently.
