Quinoa Curried Turkey Meatloaf
with Mango Chutney

1 cup cooked quinoa - cooled off
1 medium zucchini - shredded using large hole of a box grater
3 springs thyme - chopped
2 cloves garlic - minced
1 tablespoon fresh ginger - minced
1 medium yellow onion - finely chopped
1 tablespoon curry powder
1 teaspoon salt
2 pounds ground turkey
1 large egg - beaten
2 tablespoon mango chutney - reserve the rest for serving later

Directions:

Squeeze moisture out from zucchini. Heat oil in a large skillet over medium heat. Add in garlic and ginger together until fragrant. Add onion, celery, and zucchini. Stir often until softened - about 5 minutes. Add in curry powder - cook for 1 minute. Then salt. Transfer to a large bowl and let it cool of for 15 minutes.

Preheat oven to 350 degrees. Spray meatloaf pan with cooking spray.

In the bowl with sauteed veggies, add in quinoa, ground turkey, and egg. Mix well. Place the mixture on the prepared pan evenly and bake until thermometer reads 165 degrees in the center of the meatloaf.

Let if cool off for 10 minutes before slicing.
